Matcha and Peach Chia Seed Pudding
This is a fresh and delicious chia seed pudding recipe everyone will love.
Ingredients:
- 2 tablespoons of chia seeds
- 250 ml of unsweetened almond milk
- 1 teaspoon of matcha powder
- 1 tablespoon of honey or agave syrup
- 2 pitted ripe peaches, chopped
- 2 tablespoons of Greek yogurt
- 75 g of fresh blueberries for garnish
- 2 tablespoons of chopped nuts for garnish
Instructions:
- Put the chia seeds and almond milk in a bowl and mix together
- In another bowl, stir the matcha and sweetener until evenly combined
- Add the matcha and sweetener to the chia seeds and whisk until blended
- Add the chopped peaches
- Chill in the fridge overnight or until all the liquid is absorbed and the mixture has acquired a gelatinous texture
- Separate the chia seed pudding into individual jars and top with a tablespoon of yogurt, the blueberries, and chopped nuts
