Coconut Oil Vegetable Stir Fry

This quick and easy stir fry is great as a side dish or eaten over rice as a full meal.



  • 1 eggplant
  • 1 green bell pepper
  • 1 carrot
  • 1 red onion
  • 2 tablespoons of Yogi Super Food’s coconut oil
  • 1 tablespoon of soy sauce



  1. Chop all the vegetables to bite-sized pieces
  2. Add the coconut oil to a pan and heat to medium high
  3. Add the chopped vegetables to the pan
  4. Stir the vegetables so they cook evenly
  5. When the vegetables are tender and start to brown, turn off the heat and stir in the soy sauce to taste
