Coconut Oil Vegetable Stir Fry
This quick and easy stir fry is great as a side dish or eaten over rice as a full meal.
Ingredients:
- 1 eggplant
- 1 green bell pepper
- 1 carrot
- 1 red onion
- 2 tablespoons of Yogi Super Food’s coconut oil
- 1 tablespoon of soy sauce
Instructions:
- Chop all the vegetables to bite-sized pieces
- Add the coconut oil to a pan and heat to medium high
- Add the chopped vegetables to the pan
- Stir the vegetables so they cook evenly
- When the vegetables are tender and start to brown, turn off the heat and stir in the soy sauce to taste
