Apple pie cookies. Gluten free and vegan version

It makes 15 cookies.


For the filling, you need:
1/4 cup of water
1/2 tbsp. cornstarch
2 red apples, peeled and cut into small cubes
2 tablespoons of butter (you can use vegan butter).
-3 tbsp of YSF coconut sugar
1 tablespoon of lemon juice
1/2 tsp pumpkin spice (or 1/2 tsp cinnamon powder and 1/8 tsp nutmeg)

For the cookie dough:
1/2 cup of butter (you can use vegan butter)
1/2 cup of brown or coconut sugar + 2 tbsp of YSF coconut sugar
1 egg (you can make the vegan version with chia or flaxseed seeds and water)
1 teaspoon vanilla essence
1/4 teaspoon baking soda
1/4 teaspoon salt (you can use YSF Himalayan salt).
3/4 cup YSF almond flour
3/4 cup gluten-free oats
1/3 cup of gluten-free flour (you can use rice flour)

Preparation:
1. Mix the cornstarch with the water and let it rest.
2. In a frying pan over medium heat, mix all the filling ingredients and set aside.
3. Beat room-temperature butter with sugar until combined and slightly fluffy.
4. Add the egg and the vanilla and beat for 30 more seconds.
5. Add the rest of the dough ingredients.
6. Incorporate well and put in the refrigerator for 30 minutes, covered in plastic wrap.
7. Preheat the oven to 350 F for 15 minutes.
8. Grease a tray or place wax paper on it.
9. Take a tablespoon of the dough and pass it over cinnamon and coconut sugar.
10. Sink the center of the dough and place the filling.
11. Place the cookies about 10 cm apart.
12. Bake for 20 minutes or until crispy.
13. Enjoy and share with your family and friends.
