Turmeric and Tofu Soup
This soup is delicious, nutritious, and easy to make. It provides protein, as well as Vitamins and Minerals. It is Vegan and Gluten-Free.
Ingredients

1 tbsp olive oil.

½ cup chopped onion.

½ cup chopped carrot.

4 cloves of garlic.

2 tsp organic turmeric.

4 oz. tofu.

Himalayan Salt and pepper to taste.
Preparation

In a pot, heat the olive oil, add the carrot, onion, garlic, pepper, and turmeric, stir over moderate heat until uniformly coated with oil.

Add 4 cups of water and bring to a boil for 15-20 minutes, simmer until slightly reduced and vegetables are tender.

Strain the soup into a large bowl and discard the solids. Clean the saucepan and return the broth, add the tofu and simmer until the tofu is warm, about 2 minutes.
