Quinoa muffins
This recipe is gluten-free. It's a delicious breakfast or a nutritious snack.
Ingredients:

1 cup organic coconut flour or organic almond flour, or a mixture of both.

4 tbsp coconut sugar or organic panela.

¼ cup organic whole quinoa.

2 tbsp olive oil.

½ tbsp dry yeast.

1 egg.
-
½ cup skim milk.

1 tsp vanilla extract.

1 pinch Himalayan salt.

½ cup goji berries.
Preparation

In a bowl, mix the sugar, oil, milk, vanilla extract, and salt.

Add these dry ingredients to the mixture in the first bowl.

Add the quinoa and stir to mix well.

Incorporate the cranberries and mix carefully so they don't break.

Fill the previously greased molds.

Bake at 180°C for approximately 25 min.

Serve and let cool.
