Vegan Fettuccine Alfredo

 Ingredients:

  • 1 cup cashew seeds

  • 1 clove garlic

  • 2 tbsp. nutritional yeast

  • 1 1/4 cup water

  • 1/2 tsp. Himalayan salt

  • 2 tbsp. lemon juice

  • 1/2 package fettuccine

  • 1 cup spinach

  • Parsley to taste

Preparation

  • Soak the cashews in water for 8 hours. After this time, they will be soft.

  • Rinse and drain the seeds.

  • Place the seeds, garlic, nutritional yeast, Himalayan salt, and lemon juice in a blender.

  • Blend all ingredients until a sauce is formed.

  • Prepare the fettuccine pasta according to package instructions.

  • When the pasta is ready, drain it and place it in a pot over low heat with the sauce and spinach, and cook for 2 to 3 more minutes.

  • Serve with fresh parsley.
