Vegan Fettuccine Alfredo

1 cup cashew seeds

2 tbsp. nutritional yeast

1 1/4 cup water

1/2 tsp. Himalayan salt

2 tbsp. lemon juice

1/2 package fettuccine

1 cup spinach

Parsley to taste
Preparation

Soak the cashews in water for 8 hours. After this time, they will be soft.

Rinse and drain the seeds.

Place the seeds, garlic, nutritional yeast, Himalayan salt, and lemon juice in a blender.

Blend all ingredients until a sauce is formed.

Prepare the fettuccine pasta according to package instructions.

When the pasta is ready, drain it and place it in a pot over low heat with the sauce and spinach, and cook for 2 to 3 more minutes.
