Preparation

  • In a blender, blend the banana with milk, eggs, and olive oil until smooth.

  • In a bowl, combine the coconut flour with baking powder and ground cinnamon.

  • Combine the two mixtures and let rest for 5 minutes.

  • Pour the batter into a silicone loaf pan lined with parchment paper and bake at 150 °C for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  • Let cool and serve.
