Panela is the common name in Latin America for a traditional sweetener that is made from sugarcane. It is made by reducing freshly extracted cane juice until all the liquid has evaporated and is the least processed form of sugar you can find. It is mostly made by small producers using traditional methods. This process maintains the delicious and natural flavors of sugarcane. Besides being sweet, it has a hint of flavor that is similar to molasses.Â
