High in vitamins B1, B2, B3, B5, B6, B8, B9 (folic acid), and B12. It is also a source of minerals such as calcium, copper, iron, magnesium, manganese, molybdenum, selenium, vanadium, and zinc, and contains enzymes, amino acids, and fiber.
Use in place of parmesan cheese. Sprinkle it on salads, stews, soups, pasta, and rice.
